The China Study is a surprisingly easy read, and very helpful for anyone with an interest in the impact of diet on cancer. It reports on 40 years of research tracking the diets & health of 1000’s of people in urban & rural China. If you have yet to read it, I hope you will. I think the local libraries have copies. With increasing affluence in recent decades, China has made a significant transition away from their traditional plant-based diet of primarily fruit & vegetables, rice & legumes (beans, peas & lentils). They want what they see affluent nations enjoying, what they think of as “the good life” with fast food from McDonald’s, meat three times per day, all loaded with as much salt, oil & sugar as possible. Sadly, this has been accompanied by a sharp rise in diet-related chronic diseases such as obesity, diabetes, cardiovascular disease and cancer.
