Before the Industrial Revolution in the 1800’s, cancer was relatively rare. Although there are many differences in life then compared to now, one of the primary differences is diet. Back then, the largest number of people were the hard-working poor, and they lived on diets of whole plant foods because that was all they could afford. As we see from this collection of data, diet in North America has become increasingly loaded with processed foods with sugar, oil & salt, as well as animal products aka meat & dairy. These changes have resulted in a significant decline in the nutrient content of diet & coincide with the rise in rates of diabetes, heart disease & cancer.
